Here I am again. Dan and the kids haven't even finished the cookies from the first blog of this week (week 41) but I am at it again. ☺ Today was a crazy day. I had a dentist appointment and didn't get great news. I need a filling and a crown replaced! I hate hate hate the dentist, and I am usually totally freaked out about the actual dental work. This time, however, I am equally freaked out by how much it is all going to cost!! Due to my recently discovered metal sensitivities/allergies, I must always have porcelain fillings. Well after our insurance pays their portion I still owe $150.00 per filling! Even more expensive than that, I need an all porcelain crown...YIKES! I don't even want to know what that is going to cost! Sorry about Christmas kids, but Mom needed some dental work...hey would you like a cookie?? Okay so, it probably won't be that bad but it is going to be expensive. Further, Dan came home from work early with an awful migraine, so he was feeling pretty bad. Then I picked Victoria up from school and she has a cold! Why not, I mean it's been a whole week since she went back to school. I swear there should be a special font for sarcasm ; )
Being that we are all in need of a little extra TLC I decided to bake again. Before I thought about dessert, I made the ultimate comfort food for dinner...baked macaroni and cheese. Then I made MY ultimate comfort dessert...chocolate chip cookies. In keeping with the theme of this project, I decided to try a recipe that I had never used before. True to form, I made a few changes. First, the recipe calls for pecans, but I omitted them. Instead I used an extra half cup of chocolate chips. Also, I don't use Crisco and the recipe calls for butter flavored Crisco. Instead I used Earth Balance vegan shortening, and it doesn't come in different flavors. I am happy to report that the cookies turned out great! Dan and the kids said that dinner and dessert did make them feel a little better so mission accomplished. Here is the link to the recipe that I used:

My resorting to baking today is a perfect example of what I wrote about in weeks 40 and 41. Sometimes all I have to offer is food made with love. Today I added an extra helping of love to the recipes, and the result was a delicious macaroni and cheese, scrumptious chocolate chip cookies, and a full and content family. While I was preparing dinner and dessert I was reminded of the quote:
"The torch of love is lit in the kitchen." I believe that wholeheartedly, and today it proved to be true.
In closing I'd like to share another one of my all time favorite quotes. It sums up my thoughts on what to do even in situations that seem impossible. It was spoken by a very wise and lovable character. It goes like this"... C is for cookie. That's good enough for me." Cookie Monster exemplifies that sometimes all you need to feel better is a handful of cookies. Well today that WAS good enough for me...NUM NUM NUM NUM NUM!!!!!
